A simple yet decadent brunch idea sweetened with tasty truffle honey.
360 g ricotta cheese
2 tbsp truffle honey or to taste
4 slice wood-fired sourdough bread
2 tsp caster sugar
Place the ricotta into a small bowl or onto a plate. Flatten slightly with a spoon.
Cut the orange in half and lightly drizzle one side of each slice of bread with the juice. Sprinkle the caster sugar over the slice of bread and toast until done. Alternatively you can lightly toast the bread and then lightly char it over the naked flame of your stove-top. The blackened bits add flavour.
Drizzle the honey over the ricotta, scatter over the fresh thyme and finely grate the zest of one orange half over the honey.
